This Pot o’ Gold Pancake Cereal Will Make Your Saint Patrick’s Day Magical

Gluten and dairy-free, these mini pancakes are the cutest Saint Patrick’s Day breakfast ever.

Pancake cereal is all the buzz — it’s one of those food trends that went viral in 2020, and what could get any cuter or more delicious than mini pancakes made into cereal? We had to get in on this yummy breakfast trend by making a fun Saint Patrick’s Day pancake cereal recipe with a healthier twist. 

This St. Patrick’s Day-themed pancake cereal is both gluten and dairy-free. We used natural food dye and natural sprinkles, but this recipe can also be adjusted to reduce the sugar content even further by foregoing the pure maple syrup and skipping the sprinkles completely.

What You Need to Make Saint Patrick’s Day Pancake Cereal 

Pot O’ Gold Pancake Cereal 

Serves: 3-4

Ingredients:

  • 1 cup of gluten-free pancake mix 
  • 1 egg 
  • 1 ½ tbsp coconut oil, melted
  • ⅔ cup oat milk 
  • Extra coconut oil for cooking 
  • 1-3 drops of green natural food coloring 
  • Pure maple syrup for serving 
  • Natural sprinkles 

Directions:

Step #1: Start by adding the gluten-free pancake mix to a large mixing bowl along with the egg, melted coconut oil, and oat milk. Whisk until the batter is smooth. If using the natural green food coloring, add 1-3 drops or until the desired color is reached and stir well. 

Step #2: Transfer the pancake batter to a squeeze bottle, or simply keep the batter in the mixing bowl and use a teaspoon to add the batter to the pan. 

Step #3: Heat a large skillet over medium heat with additional coconut oil. 

Step #4: Squeeze out about a teaspoon of the batter from the squeeze bottle (if using) to create a mini pancake. Or use a teaspoon to drop onto the pan. Cook until the mini pancakes start to bubble and then flip. Cook for an additional 30 seconds. 

Step #5: Transfer the mini pancakes to a bowl and continue this process until all the batter is used up. 

Step #6: Serve with a drizzle of pure maple syrup and natural sprinkles. 

Step #7: Enjoy!
