It’s healthy, delicious, and insanely simple to make!

Some TikTok health trends are questionable — like sipping on lettuce water as a sleep aid or squeezing lemon in your coffee for weight loss. While we definitely take every trend with a grain of salt, this viral healthy Reese’s Cup (a.k.a. a giant peanut butter cup rice cake) is a recipe we can totally get behind! Trending on #FoodTikTok, this mouthwatering dessert is made with whole food ingredients and can be whipped up in minutes. Plus, it’s easy to customize! Use your favorite dairy or dairy-free chocolate, or swap peanut butter for a nut-free alternative (like sunflower butter). What’s not to love? I mean, really — It’s a giant homemade peanut butter cup, but on a rice cake!

The best part? You only need four simple ingredients and 10 minutes or less. Essentially, you layer your rice cake of choice with a slather of peanut butter. Then, you dip it in a bowl of chocolate. The magic happens when the chocolate coating hardens — it forms a crunchy chocolate shell and transforms into this must-have trending recipe.

Ready to indulge? Here’s how to make it.

Ingredients You’ll Need

Rice Cake: This will serve as the base for your recipe! You’ll need plain, unsweetened rice cakes.

Peanut Butter: Any peanut butter will work here, though you may want to reach for one that’s a bit thicker (so it’s easy to layer). Not a PB lover? You can use any thick and creamy nut or seed butter in place! Almond butter, sunflower butter, hazelnut butter — the options are endless. That said, PB and chocolate were made for each other, so it’s still our top pick! And to keep it healthy, try to choose a single-ingredient nut butter (avoid added sugar, salt, oils, and the like).

Dark Chocolate: Grab your favorite dark chocolate bar or chips! This will be melted to form the chocolate coating. We love Hu Kitchen chocolate! It’s dairy-free and made with real ingredients. For chocolate chips, try Endangered Species Oat Milk chocolate chips or Enjoy Life Foods.

Coconut Oil: This dash of coconut oil will help the chocolate melt and freeze!

Sea Salt: Completely optional, but highly recommended!

How To Make Healthy Chocolate PB Rice Cakes

This recipe is so simple, and it takes minutes to make! Enjoy it as an afternoon snack, post-dinner treat, or anytime your sweet tooth kicks in! Follow our recipe below and customize as needed. Swap PB for your favorite nut butter, use your favorite chocolate, and add any toppings of choice, like chopped peanuts or nuts!

Healthy Viral Chocolate Peanut Butter Rice Cakes

  • 1 rice cake, plain and unsweetened
  • 1-2 tbsp unsweetened creamy peanut butter (or favorite nut or seed butter)
  • 2-3 tbsp dark chocolate chips or chopped chocolate bar of choice (we love Hu kitchen)
  • ½ tsp coconut oil
  • Flaky sea salt, to garnish (optional)

Step #1: Gather & Prep Your Ingredients

Gather your rice cake, peanut butter, chocolate, coconut oil, and flaky sea salt. You’ll need a small bowl to melt the chocolate.

Step #2: Spread Your Nut Butter

Spread your creamy peanut butter onto your rice cake. Make sure to spread the nut butter, so it’s evenly coated with a thick layer!

Step #3: Melt the Chocolate

Add your dark chocolate chips or chopped dark chocolate into a microwave-safe bowl with ½ tsp coconut oil. Melt your dark chocolate in the microwave, stopping to stir every 30-seconds until it’s fully melted.

Step #4: Coat Your Rice Cake in Chocolate

Dip your nut-butter-topped rice cake in the chocolate layer until it’s fully coated with chocolate. Alternatively, you can drizzle the melted chocolate over your rice cake and spread the coating with a spoon or spatula.

Step #4: Top With Flaky Sea Salt (or Additional Toppings)

Sprinkle a pinch of flaky sea salt onto your chocolate-coated rice cake. This is the time to add any additional toppings, such as finely chopped nuts. This step is optional!

Step #5: Freeze Your Rice Cake

Place your rice cake on a plate (option to line the plate with parchment paper) to prevent melted chocolate or peanut butter from sticking. Freeze for 10 minutes or until the chocolate fully hardens.

Step #6: Dig In!

Once your chocolate coating has hardened, remove from the freezer and enjoy! Serve with Greek yogurt, banana nice cream, or eat it as is. There’s no wrong way to enjoy it!
