Use your favorite dairy or dairy-free chocolate, or swap peanut butter for a nut-free alternative (like sunflower butter). What’s not to love? I mean, really — It’s a giant homemade peanut butter cup, but on a rice cake!

How To Make Healthy Chocolate PB Rice Cakes

Healthy Viral Chocolate Peanut Butter Rice Cakes

Ingredients:

  • 1 rice cake, plain and unsweetened 
  • 1-2 tbsp unsweetened creamy peanut butter (or favorite nut or seed butter)
  • 2-3 tbsp dark chocolate chips or chopped chocolate bar of choice (we love Hu kitchen)
  • ½ tsp coconut oil
  • Flaky sea salt, to garnish (optional)

Step #1: Gather & Prep Your Ingredients 

Gather your rice cake, peanut butter, chocolate, coconut oil, and flaky sea salt. You’ll need a small bowl to melt the chocolate.

Step #2: Spread Your Nut Butter 

Spread your creamy peanut butter onto your rice cake. Make sure to spread the nut butter, so it’s evenly coated with a thick layer!

Step #3: Melt the Chocolate

Add your dark chocolate chips or chopped dark chocolate into a microwave-safe bowl with ½ tsp coconut oil. Melt your dark chocolate in the microwave, stopping to stir every 30-seconds until it’s fully melted.

Step #4: Coat Your Rice Cake in Chocolate

Dip your nut-butter-topped rice cake in the chocolate layer until it’s fully coated with chocolate. Alternatively, you can drizzle the melted chocolate over your rice cake and spread the coating with a spoon or spatula. 

Step #4: Top With Flaky Sea Salt (or Additional Toppings)

Step #5: Freeze Your Rice Cake
