Ingredients:
Peanut Butter Filling
- 1/2 cup peanut butter, unsweetened
- 2 tbsp coconut flour*
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- Pinch of sea salt (if peanut butter is unsalted)
*Note: If your peanut butter is extra runny, you may need extra coconut flour. Follow the recipe and start with 2 tablespoons. If needed, add 1 tbsp at a time until you achieve a cookie dough-like consistency.
Dark Chocolate Coating
- 1 chocolate bar of choice (free from refined sugar and dairy, we love Hu Kitchen or Eating Evolved)
- 1 tsp coconut oil
Directions:
Step #1: Gather Your Ingredients
Gather the ingredients for your peanut butter filling and chocolate coating as well as any baking supplies, such as mixing bowls, parchment paper, and measuring cups.
Step #2: Add Your Peanut Butter Filling Ingredients to a Mixing Bowl
In a medium-sized bowl, whisk together peanut butter, vanilla extract, coconut flour, and maple syrup until you achieve a dough-like consistency. If your peanut butter is runny, you may need to add additional coconut flour (see the note above).
Step #3: Form & Freeze The Peanut Butter Eggs
Next, form your peanut butter batter into egg shapes and place on a baking sheet lined with parchment paper. Once you’ve formed your eggs, place them in the freezer for 15-30 minutes to chill.
Step #4: Prep Your Chocolate Coating
While the dough is chilling, prepare your chocolate coating by melting chocolate and coconut oil together in the microwave. To prevent the chocolate from burning, stir the chocolate mixture every 30 seconds until completely melted.
Step #5: Coat Your Your Peanut Butter Eggs With Chocolate
Once the dough has chilled, remove your healthy peanut butter Easter eggs from the freezer. Dip each egg in the melted chocolate mixture until completely coated. If desired, sprinkle with sea salt.
Then, place eggs back in the freezer for 15-30 minutes to harden.
Step #6: Enjoy!
Remove your chocolate-coated chilled eggs from the freezer. Enjoy immediately or store in an airtight container in the freezer.
